For the most part, I try to be healthy and eat good things, but if you give me a baguette and some Camembert, I'm gonna eat it.

The first time I ever ate a baguette, I was 15 years old and in France. I was blissfully not yet celiac and quickly came to love the daily ritual of heading to the outdoor market to pick up a fresh baguette, cheese and fruit. It was such a simple lunch, yet it deeply satisfying. We always sat as a group and outside on the grass somewhere. It was a time of community and deliciously simple food. The fresh baguettes were crispy on the outside and chewy on the inside. They were a perfect match to the soft cheese and fruit.

These gluten free sourdough baguettes have the same crispy exterior and soft crumb as those French baguettes. They don’t take a terribly long time from start to finish. You can mix your levain the night before, mix your dough as soon as you want up and have them baked by lunch. If you want them fresh for dinner, you can mix your levain in the morning, mix your dough around lunch and have them fresh out of the oven for dinner. They are best eaten the same day they are baked, so figuring out your baking schedule is important.

Curious about what you can do with a good baguette? You can enjoy them in the Parisian style with a delightful cheese and some fruit, or you can make an American style meatball sub! You could make a big hoagie style sandwich for a party, or easy dinner. You can serve them along side some delicious spaghetti bolognese. You can even just serve them as your starch with a meal and let everyone spread on some butter and sprinkle on some flake salt. You’re going to want this recipe.
