Gluten-free Sourdough Calzones
Bringing back a favorite from my gluten eating, teen era. There is something super nostalgic about a calzone. Now you can make them at home!

While Leslie Knope has strong negative feelings about calzones, I have strong positive feelings about calzones! Calzones are a nostalgic food for me and in all ways delicious and fun. In my teens and early 20’s, before my celiac diagnosis, I would go with friends to the local pizza dive, Roma Pizza. The bakers and waitstaff were all hippies and some of my favorite friends worked there. . .all my memories in Roma are good ones. While they had great pizza and pasta, I always opted to order a calzone. Not too bready and packed with my favorite ingredients, dipped in a warm and zippy sauce, what is not to like about calzones? I have found a lot of gluten free calzone recipes to be too bready, but this recipe allows you to thinly roll your dough, so it can bake up crispy, while also being strong enough hold all your desired filling. On the flip side, if you love a bready calzone, this recipe will also work! You will just need to roll your dough out on the thicker side.
This recipe is similar to my GF sourdough pizza crust, but it is slightly different. You can roll it thinly and stretch it around your filling without the dough ripping. If you have problems with your dough tearing, you’ve probably rolled your dough too thin OR you have over filled your calzones.
Use this recipe to have a fun family night of baking your individual calzones. Include your kids/spouse/significant other/friends in the rolling of the dough and letting them put their own filling choices into their rolled out dough. This is the perfect recipe to include all your favorite people. You can also customize the size of your calzone. My kiddos eat a much smaller calzone than my husband, but they love that they get their very own to rip and dip.
If you have left over dough, you can roll it out into a pizza crust, bake it and then freeze it for an easy lunch or dinner! Who else is a calzone fan out there?
