How many times have you ordered gluten free pizza, with a hopeful mindset that it will actually be gluten free AND worth the calories? You see the server approaching with your dinner and soon realize that you are being served disappointment with some sauce and cheese melted on a literal cracker. Or, I have also had crust that is so full of gums and starches, that my stomach starts hurting within the first bites of trying the pizza. In the last 20+ years, I have been disappointed too many times to count.
I have worked on this recipe for well over 3 years. I can without a doubt say, this crust has everything you could want in a pizza crust. It is chewy with a thin and crispy crust. It is sturdy and will hold all of your toppings confidently. It has a slight tang from being fermented. Every version has been taste tested by my husband and my kids. We are all in agreement that this finalized recipe is the best!
You will find this recipe will satisfy your pizza cravings, while also giving you the comfort of knowing there is some real nutritional value as well. Gluten free pizza has always given me some digestive issues. I can say without a doubt that I do not feel any kind of discomfort or bloating when I eat this sourdough pizza. It also satisfies the soul and desire for REALLY good food!
The dough comes together quickly and seems quite slack, but after it has time to sit, you will find it is a really nice dough to work with. Rolling it out is a dream. I always choose to double the recipe and freeze a couple of the par baked crusts for easy lunches and dinners for my girls. I would like to remind you that the quality of your ingredients matters. You want to use finely ground flours and finely ground psyllium husk powder. It truly makes a difference. You can make light buckwheat flour in your high speed blender. Easy Peasy. That being said, you can most definitely try to sub out ingredients, but I don’t recommend it in this recipe. I have tried so many different types of flours and flour combinations and the ones listed in this recipe are above and beyond what I have found to work best.
