We’re incredibly lucky to be spending Easter with my parents this year. The weather is warm, the skies are blue, and the air is filled with the sweet scent of blooming desert flowers. Meanwhile, back home in Colorado, it’s still snowing—so I’m especially grateful to be soaking up the sunshine, surrounded by green and blossoms.
If you’re anything like me, the week(s) can slip by and suddenly it’s time to plan a menu! Whether you're ahead of the game or pulling things together last-minute, I’ve rounded up some easy recipes—including a few that use sourdough discard instead of active starter (just in case your gluten-free starter didn’t get fed in time!).
GF Sourdough English Muffins:
These come together quickly, can be made fresh the morning of and make a delicious Eggs Benedict for your special occasions.
Gluten Free Sourdough Discard Waffles:
Another quick and easy recipe, but you can fancy it up with a fruit compote and whipped cream. Easy and delicious!
Gluten Free Sourdough Pie Crust:
This versatile recipe can make a traditional pie, hand pies (Poptarts), used as a quiche crust, or make a big slab pie to share with loved ones.
Gluten Free Sourdough Focaccia:
Add in spring fresh herbs like chives and dill, this focaccia will made a great addition to your bread basket.
Gluten Free Sourdough Bagels:
If you have time, these bagels are so delish and would be worthy of any brunch table.
Dilled Roasted Beet Salad with White Balsamic Vinaigrette & Goat Cheese:
One of my favorite salads of all time. Can be made the day before, just wait to add the goat cheese!
Gluten-free Sourdough Strawberry Rolls with Lemon Frosting:
For an epic breakfast or bunch, you don’t want to miss this recipe! You will need active starter, but you make them the night before you bake them. These are a fav for our spring and summer celebrations!
