I’m allergic to corn (I know - I have a LOT of food allergies). I have some corn flavoring (it smells amazing!), that I haven’t tried yet. But, I have been wanting to try corn free corn bread (I know - that sounds like an oxymoron! =D) could I replace Masa Harina with almond flour and use the corn flavoring?

Hello Claudia! Unfortunately, I cannot answer your question as I have not tried this recipe with any of those ingredients. Almond flour may work in place of masa harina, but almond flour is a heavier flour and much higher in fat, so the end product would be more dense. What would you use to replace the cornmeal?

Well, I was thinking the almond flour would be a replacement. However, if it would be too heavy, I’m not sure what to use. Do you have any recommendations?

I think almond flour would work for the cornmeal, and you could sub millet flour for the masa harina. Keep in mind, I haven't tried these ingredients, so I do not know if the end product will be successful.

Thank you. I will give that a try. I totally understand that since you haven’t tried it, you couldn’t know how it will work. It may be a while before I can try it, but when I do, I will let you know if it works out.
